การศึกษาครั้งนี้มีความมุ่งหมายเพื่อพัฒนาหลักสูตรการแปรรูปปลาสลิด โดยต้องการให้นักศึกษา กศน.อำเภอบางบ่อ นำเอาวิชาความรู้และประสบการณ์ที่ได้รับไปใช้ในชีวิตประจำวัน เพื่อให้สามารถประกอบอาชีพสร้างรายได้ให้กับตนเองและครอบครัวจนพึ่งตนเองได้ พร้อมทั้งทำให้นักศึกษา มีความรู้ความเข้าใจในอาชีพของท้องถิ่น ทำให้นักศึกษาตระหนักในคุณค่าและเป็นการอนุรักษ์ ภูมิปัญญาท้องถิ่นของตน วิธีการศึกษาได้ศึกษาจากประชากรซึ่งเป็นนักศึกษาระดับมัธยมศึกษาตอนปลาย ศูนย์การศึกษานอกระบบและการศึกษาตามอัธยาศัย อำเภอบางบ่อ จำนวน 30 คน โดยใช้แบบสอบถาม ที่มีค่าความเชื่อมั่น 0.98 สถิติที่ใช้ในการวิเคราะห์ข้อมูล ได้แก่ ค่าร้อยละ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน และ t-test ผลการวิจัย พบว่า การประเมินความเหมาะสมของหลักสูตรท้องถิ่นเรื่อง การแปรรูปปลาสลิด คุณภาพของหลักสูตรท้องถิ่นเรื่อง การแปรรูปปลาสลิด สำหรับนักศึกษาระดับมัธยมศึกษาตอนปลาย กศน.อำเภอบางบ่อ จังหวัดสมุทรปราการ จากผู้เชี่ยวชาญทั้ง 5 ท่าน พบว่า มีความเหมาะสมในระดับมาก ผลการวิเคราะห์ความเหมาะสมของแผนการเรียนรู้ พบว่า มีความเหมาะสมอยู่ในระดับมาก ผลการวิเคราะห์ความเหมาะสมของแบบทดสอบวัดผลสัมฤทธิ์ทางการเรียน พบว่า มีความเหมาะสมอยู่ในระดับมาก ผลการวิเคราะห์ความคิดเห็นของผู้เรียน พบว่า ผู้เรียนพึงพอใจมาก และผลสัมฤทธิ์ทางการเรียนของผู้เรียนหลังเรียนสูงกว่าก่อนเรียน อย่างมีนัยสำคัญทางสถิติที่ระดับ .05
The objective of this study was to develop curriculum for processing Siamese Gourami for the purpose that the students of the Office of Non-Formal and Informal Education, Bangbor District could apply knowledge and experience for their daily lives and could earn for living of themselves and their families. Furthermore, this will enable students to recognize the value and conserve local wisdom. 30 high school students of the Office of Non-Formal and Informal Education, Bangbor District used for this study by using a questionnaire with a reliability of 0.98. The statistics applied in data analysis comprised percentage, mean, Standard Deviation, and t-test. The findings of this research were the evaluating appropriateness of the curriculum on Siamese Gourami processing and quality of local curriculum on Siamese Gourami processing for high school students of the Office of Non-Formal and Informal Education, Bangbor District, by 5 experts, was at a high level. The analysis result of appropriateness of learning plan was at a high level. The analysis of appropriateness evaluation of learning achievement test was at a high level. The students were very satisfied with their learning and learning achievement after learning was higher than before learning at .05 level of significance.
